BACK TO BASICS
10.00am -1 .00pm
‘HANDS ON’ Morning course. This course has been designed for the beginner to the more confident cook. Taking you right back to basics as you learn how easy it is to bone out and stuff a chicken, for use at buffets, dinner parties etc. You will take this home with you to coCost: £40 includes coffee and biscuits on arrival, demonstration. tuition, recipe sheet, ingredients, use of equipment and aprons.

TWO DAY CHOCOLATE COURSE
The course has been designed for those with a genuine interest in chocolate from the complete beginner to those students studying for the Diploma in Professional Cookery and NVQ level 3 Advanced Patisserie
After a brief introduction to the history of chocolate, you will learn how to temper, handle and work with chocolate to produce a selection of mouth watering truffles, moulded chocolates, a chocolate box and lid to compliment and present your truffles in, and a moulded figure.

FISH COOKERY
10.00am — 4.00pm
This fun filled day course introduces you to handling, selecting, classification, skinning, gutting, filleting, storing, freezing and cooking a selection of fish. After lunch you will put your new found skills to work by producing one of the dishes demonstrated to take home with you.

FOOD FROM AROUND THE WORLD
10.00am 4.00pm
Rekindle memories of holidays as I take you on a culinary trip around the world. Experience a great diversity of tastes, textures and ingredients in the various dishes demonstrated, and discover how easy they are to prepare from the simplest to the st complex. After lunch you will create one of the dishes demonstrated to take home as a sample.

A DAY OF SAUCINESS
10.00am — 4.00pm
Take away the mysteries of sauce making on this one day course. I will show you how easy it is to make delicious sauces to accompany a selection of dishes in a fraction of the time using modern methods. After lunch you will create one of the dishes demonstrated to take home as a sample.

DESSERTS FOR DINNER PARTIES
10.00am—4.30pm
A fantastic course for all budding patissiers. Let me teach you to give your dinner party desserts the ‘WOW FACTOR’. Learn how to make mouth-watering desserts the easy way. You will work individually and in a group to produce stunning desserts that you can serve individually or part of an assiette. A sample of the dishes made will be taken home.

SPECIAL AND DECORATIVE BREADS
9.00am—5.00pm
Come along and enjoy a fabulous day producing special and decorative breads. Learn traditional and modern methods of bread making using various types of yeast. The course is 95% ‘Hands On’. You will take home all the goodies you produce.

Designed for those who would like to further their studies in patisserie. The course covers various types of pastry and fillings — sponge goods including gateaux — Bavarois — use of gelatine. Patisserie equipment — hygiene and safety — refrigeration and storage
